Su Filindeu is one of the rarest pastas in the world, made by hand stretching dough across a traditionally woven basket called a fundu. Lorighittas 💫 a hand-braided pasta traditionally from Sardegna tossed in ragu di rudinazzi. ⁠ ⁠ Rudinazzi is a dialect term used for waste or rubble, a play on words for this sugo made from typical butcher's offcuts. ⁠ ⁠ Veal hooves and marrow bones, chicken feet backs and necks and vegetables are roasted until golden, then simmered for several hours reserving only the passata sauce afterwards. This fresh pasta dish is then finished with grated cave-aged pecorino cheese. ⁠ ⁠ A sauce inspired by Chef @rob_gentile’s Nonna ⁠ ⁠ #StellaWestHollywood⁠ #comingsoon ⁠
Burrata Pugliese with Astrea Caviar & Canadian Olive Oil🌟⁠ ⁠ To create this dish, we use one-of-a-kind oil made from olives grown on Salt Spring Island in British Columbia. The unique grassy notes and flavours of Pacific seaweed complement the salty caviar and creamy burrata perfectly. Pesto Genovese made traditionally in a hand-made Carrara marble mortar and pestle from Massa Carrara, Tuscany 💫 #StellaWestHollywood #comingsoon
Su Filindeu | a rare pasta dish originating from a town called Nuoro in Sardinia. @rob_gentile kneads a dough made of Semola flour, water and salt to a perfect consistency. He then pulls and folds the dough by hand 8 times to create 256 thread like strands. Next he layers the thin strips 3 times across a circular woven basket called a fundu. The pasta is left out to dry until it has a hard, crisp consistency. Chef Rob then breaks the pasta into small strip-like shapes shown here. Needless to say, su filindeu is a labor of love and we cannot wait for you to try this beautiful dish at Stella ✨ #handmadepasta #sufilindeu
